wow that is gona be lgith, are you gonna have a track racer w/ no interrior, or an Infini style little sound deadening yet plush interrior? Make it a light powerful Daily D with a full interrior minus the absolutely uneccesary stuff. Great looking project car.

ive got a nice interior im putting in soon, just need to get the rest of the 'under the dash' wiring finished so i can lay the carpet and put the dash back down...it will have carpet and stuff, not totally stripped. it certainly wont be my daily driver though

Looks good so far.
I'm a fan of filling in the moulding.
The best way is to use this liquid metal stuff that is similiar to JB Weld. Doesn't crack and is somewhat flexible. Welding in some sheet metal is not a god idea as the door will warp really bad.
You should also fill in the trim along the bumpers like I have. They make a liquid polyeurathane that is used as filler and will remain flexible.
