I'm getting my engine rebuild, my engine is a 91
s5 but do the part have to be 91 or S5 parts, is there a difference?

All S5 parts will work. Some S4 parts will work, but it depends on what you are replacing. Like S5 and S4 rotors are different, but the E-Shafts are the same etc.

The oil pumps are different, I believe the housings are the same but have different part numbers anyways.
