Unhappy Overheating S4 T2 in Fl, what a bad combonation

As the title states, my T2 is overheating. To answer the basic questions. Yes, it shoots out white smoke when with a sweet smell. This is more noticable when the car is first started. It's been overheating much more lately also. To the extent where the gauge pins it's self to the "H" & it's spewing coolant & steam after I shut it off. My "Add coolant" buzzer goes on when I crank the car up. I can add coolany and it will be fine for that day. But the next day it will be on.

I've tested the thermostat in the pot of hot water method. It opened up as it should have, but I have no idea at what temp. I lack a thermometer. I have the air pump removed also, maybe that would have some affect. I haven't changed my pressure cap yet, nor have I changed my radiator. I'll be doing a pressure test at school as soon as I can get my car in the shop. I did the check method having someone crank while I look at the filler neck to see if there are bubbles, there are.... If my memory is correct I need a new o-ring giving the results of this test.
Question is, where is this and how hard would it be to replace it. And would I be better off just rebuilding it? If that's the case, exactly how much am I looking at for the complete rebuild. From the symptoms, it's looking like I should just rebuild. That's just my thoughts though.

I love this car to death, but it's giving problems like hell. I also have the hot start problem. Which i'm still trying to work out....

Please someone provide some insight on this because if I have to rebuild it, i'm going to be in one sticky situation. Not that I really don't want to rebuild it for my own security and curiousity of what exactly is going on inside my motor, but money isn't there to do it all...Thanks people of The club. You all are usually a large help.
