Offset confusion

Let me make sure I have this right. I know some of you are running 38mm and 40mm off sets. And I am sure there is some other offsets out there also.
My question is or tell me if this is right.

The 40mm (being greater) will stick your wheel out further then the 38 0r 35mm if all the rims are 7" wide.

What I am trying to understand is, I want a new set of 17" wheels on my S5.
The 17' Enkei RSF2 wheels on there now I do not like so I am replacing them.
I want to make the tire flush with the body but not stick out.
So I was thinking
17x7
40mm offset
5x100/114.3 lug

When I did my search it pulled up several sizes but not pictures of the flush mounted wheels.
Tell me what your running if you have a picture you can shoot me.

if you have an 8" wheel and 0 offset, then you have 4" of lip on ither side, if you have negative offset of 50 mm then (1" =about 25mm) then the rim is spaced 2 " towards the fender (6" of lip on the outside and 2" on the inside) if its positve offset the the rim will have more inner lip than outter lip (front wheel drive cars have big + offsets) so a 17x7 with positve 40 mm offset will have about a 2 1/2" spacing off the face of the hub (where the studs stick out and 4 1/2" inwards toward the strut, so take a piece of metal, or a piece of wood (has to be flat) about 23" long (about the size the wheel and tire combo will be) (has to be flat) and with the wheel off, jack stand under the suspension arm so its compressed, place the metal on the face of the hubnext to the wheel studs so its vertical and centerd and take a tape measure to the top of it towards the fender and measure
2 1/2", and thats how far the wheel will stick out
