Is this normal?

Alright, I got my Rebuilt engine for a while now and already past the breakin period. I notice though, when I drive for a while and reach optimum temperature, then (lets say) go inside a store and come out within 5 minutes, I start the car, and then it dies. I have to hold the gas down for a few seconds before it will hold idle. It only seems to happen if I only leave the car for a few minutes then try to start. If it completely cools down then I have no issues like that.

so is this normal???

Yeah, the typical rotary hot-start problem, search and you'll find tons of info

Try putting a fuel cut switch in your car, and shut off the car with the switch and that should help out alot.
