Ok, we need to get a little terminology straight.
The actual thermostat for the cooling system is mechanical and located under the aluminum neck where the radiator cap is (on the S4).
Depending if you have the factory electric fan, there might also be a sensor drilled and tapped into this same neck.
This turns the aux electric fan on/off IIRC.

If you are referring to the sensor in center of the top of the radiator, that is the coolant level sender.
If that wire is broken, you should be getting a add coolant light and a nice buzzing noise. If you could narrow these down, we can help a little more.

Hrm, still not exactly sure where your talking about. There is the coolant temp sensor for the ECU that is located under the alternator, but it has 2 wires.

I have my aftermarket temp gauge sensor in the spot where the aux fan switch goes. Heres a picture.

If the sensor is where that blue nut and black wire are, that would be for the fan.

Yeah, that is the sensor for the fan (pay no attention to my hacked setup! Mechanical gauges only come in 1/2" NPT and its hard to find a place to mount a threat that big)

Do you have the FSM downloaded? If not, there are links to download it in the FAQ section.

On the very last page of the Cooling chapter of the S4 FSM, it goes over this setup.

Seeing how it's winter, and you hopefully have a functional primary clutch fan (or electric if converted), I wouldnt worry too much about it. My car came with AC but didnt include a fan, it was kind of a random thing it seems like.

Hope that clears up most of it. Any more questions?
