I am 6'2 no problems with head room for me but I would think a non sun roof car will have more head room. the sun roof assembly is just bolted to the roof of the car so I am sure that will lower the head liner.

Aftermarket seat and GarageStar seat rail. They're currently working on a new design that's about to release which will fix some fitment issues they currently have with some seats like Pole Position.

I’m 6’3, and run a Kirkey seat bolted to a stock rail. For a seat with more padding, bolt it directly to the floor.
