manual steering rack

I was thinking of removing my power steering assembly and adding a manual steering rack from a first gen ( which I heard will work but Ihavnt checked and feedback is welcome) This is for a ITS race car with 225 width tires and GC springs and kyb shocks. STB andstock sway bars, massive negative camber in use. Keep in mind iam a 120 pound girl of average or slightly above average strength. Is the ability to catch the car seriously threatened when at speed, including as slow as 25-30 mph. The car is mostly not for enduros , but it will see 3 hr enduros , would that be an issue? I can work out, but I can only do so much. Any other feedback is welcome including detailed instructions on the process. Seems straight forward but id like to know.
