I think I'm with the other guys on this one either teach her to drive a stick or buy an auto Rx-7.The '89 I have as a parts car is an auto and it looks like it would be a bit more complicated to do a manual to auto swap than an auto to manual one.Part of the wiring harness on the drivers side is different as there is around four connectors on the transmission that plug into it.You'd have to get a radiator for an auto car or run a seperate cooler for the transmission fluid.Driveshaft is different.I'm sure there's more but I'd have to go look at the car.If you decide to do this I probably have most of the parts you need. The radiator is in my car and the ecu was gone before I got it but you might not need it.Most everything else I probably have and can part with.Unfortunately I live in Tennessee and I don't think I could ship the trans. to Oregon, even though I'd like to get rid of it 'cause I have no use for an auto trans. The car didn't run so I don't know if it's any good anyway.I'f you go through with this PM me maybe I can help you on some of the shippable parts.

i feel for you man, i know there is no way to change some girls mind about driving manual they just wont do it, i have tried to get me sis to learn to drive manual, cuz i have 2 manual rx7's she could drive, but she has to keep her pos auto rustang that she pays $500 for a month for just so she can drive a automatic, anyways, what i would do is trade somone with a auto for your car, cuz there are a million auto owners that want a man. it should be easy.
