how much of this do i need?
so how much vacum hose,rubber fuel line,and coolent line (excluding the large radiator hose) do i need to plum a s4 t2 engine with emisions and omp removed?

Just get a generic vacuum hose kit from the local speed shop. Most contain a selection of commonly used hose sizes in various lengths. You get a lot of thin hose, a bit less of the thicker hose, a bit less then that one size larger, etc. These kits are fairly cheap ($30-$50) and means you won't be without hose when you need it.
