how could I?...
How could I put a rear seat behind the passenger seat and keep my stock box behind the driver's seat, and im not worried about room, i know there isnt any, but a seat with no room beats someone sitting on the box...

If by box you mean storage bins...can't be done.
There are 2+2 seats you can get, they came on some models, they are an extremely small backseat, but they get the job done. However, you must lose your storage bins to put them in.
I say let the third person lay in the hatch, holding on to the luggage belts for dear life. That's fun.

I wouldn't think that'd be too bad a job. The deck which the bins mount in is made of carbon fiber. I expect if you got creative with some fiberglass and found a good upholsterer you could have a very unique setup.
The 2+2 back seat bottom is just molded foam with leather or vinyl. On the seat back, you might be challenged.
I think I'd get the entire setup from a salvage yard, to get the hardware you need. You could take the seat back apart - remove the upholstery - and might be able to cut it into a single fold-down seat. The more I think about it the cooler it sounds.
I changed out the bins/deck for the back seat assembly in my '87TII, so I've got pix of how it all goes together if'n you might need.
