Exclamation Getting to Operating Temp with no Thermo?

Ok let me break it down real quick.

-Bought this car several years ago, started too over heat on me. Garaged it for a year or so and took emissions off and put block off plates on. Just recently trying to get it operating.

1 Overheating problem, couldn't find leak
2 Discovered leak between LIM and Block. Replaced seals. Noticed lots of rust and what looks like, quick radiator sealant gunk in system.
3 Start car turbo starts too smoke and smells like burning plastic and it appears too be leaking (LIM) from same area. I remove thermo stat and shove a hose in and watch brown water come out till its clear.
4 next day I pressurize the coolant system and system holds pressure. (No leak)
5 Start car and it revs up too 5k and stays. Turbo starts too smoke but can't see a leak. I turn off and restart car idles at 1500, turbo is not smoking..
6 I drive it around the block and notice that the car has reached operating temperature with NO thermostat in it. I get out and can hear the coolant boiling (or making a lot of noise). Looks like theres smoke coming from under the turbo now..

Any Ideas?

did you do the coolant pressure test overnight?

No just for about 5 minutes, it did very very slowly lose pressure but I found the plastic bleed screw on the radiator was leaking a little. But when the cars running theres no coolant leaking from it.. Or anywhere for that matter.
