The E-Fan was my problem the entire time
So after removing the knock read wire from the wiring harness and check the voltage on that line I discovered that the voltage was 7.5 instead of 12. It just so happened that the line I was using on the relay to start the E-FAN i had plugged into that line. Since the voltage was nearly the halfway point, and the voltage would drop sooner then expected, the ECU was flipping out on when to activate the VDI.
So I moved the relay wire to another line that's only one when the car is on and now everything is working better! The acceleration is smooth and uniform and she responds much much better!
I also fixed a small exhaust leek that included me ripping the stud (accidently) out of the exhaust manifold and replacing it with a bolt. The exhaust wasn't leeking before i went on a highway run, I'll have to check it again in the morning when there's day light. I think i can pass emissions now....
Just a word of advice, always read the FSM. The SAFC still reads a knock, even though the wire isn't plugged into anything. I think i fried something...lol
