OR does coolant type matter?

i just had my engine rebuilt by pineapple, got everything installed did my 1st oil change AND THEN

my coolant buzzer kept going off, i kept filling the water up but it keeps getting low.
i dont have a leak anywhere that i know of, but i do have a shaky idle.
my idle keeps trying to fall around 100-200 Rpms then shots itself to 1100 rpms and steadies out at 900 before doing it all over again...WTF!

so is my water evaporating or do i have a blown water seal on my fresh rebuild that has less than a 1000 miles on it?

what should i do?

Are you actually filling it up with water? or 50/50 water coolant mix?

If your putting coolant in it make sure the exhaust doesn't smell sweet or come out white... that will tell you a blown water jacket seal, check your radiator cap it might need replacing. If you haven't done it than its a good idea anyways just to make sure it seals. It could be a TPS issue or a vacuum or any number of things. Start with a good search of rough idle or unstable idle or something to that effect. This is a common problem, well the idle thing. The coolant thing not so much. Are you SURE that its not leaking somewhere... like POSITIVE?

Teeny tiny pinhole leaks will cause this in your 7 I am afraid. I chased this issue for a few months until I accidently found the issue, which was a tiny crack in the top radiator resevoir. It wouldnt let water out, but would let air in it was so tiny. Check your hoses, clamps, radiator for dried deposits. Coolant evaporates and leaves crusty residue.
