Coolant and Engine Temp Questions

Coolant and Engine Temp Questions
Ok, first question is : After rebuilding an engine, how do you fill the coolant?
After I rebuilt mine, I took off the top screw of the radiator, Then dumped in coolant into the filler until coolant came out that radiator screw on the top of the radiator (the air bleeder screw)..
put the screw back in, and topped off the coolant , squeezing the pipes to get last bit of air out, and bumping car a little to shake any more out... topped off coolant.. and done..
Is that the right way? how do I know if I got all the air out?
Question #2:
After putting my engine and all back in, I did find a leak of coolant at the water pump housing to engine... (I chopped that gasket up pretty good... have a new one on the way as I type...) so my overflow isn't being sucked into the engine.. Therefore I have to fill it before driving.... and my temp gets near half sometimes.. usually sits at about 1/4 (which is still hotter than it was before I had to rebuild..) When I fix this coolant leak, will it lower my temps much/at all?
Question #3: I read that the 13B is cooled 40% (around there) by OIL... And I read that people would take their front ECC shaft thermostat out, and replace it with a bypass (like the one on mazdatrix page) or use washers to bypass it somehow...
What exactly does that thing do? What does replacing it with the bypass do ? Any BAD things that go along with using a bypass ? or ALL good things? Could that be the cause of my increased temp ?
