coolant air lock and massive hesitation

ok, two questions, one: how hard is it to get these cars full of coolent? my friend and i seem to have alot of problems with getting air bubbles in our cooling systems :S. is there any trick to getting it full at one time? Two: i have a lightly to mildly modded 87 TII. It has 720cc all way round, 225lph walbro, 1.8 rtec7 upgrade, opend exhaust, cone fillter, FMIC, and pd to banjo convertion for engine goodies. I do have a vacume leak so it idles rough and afterburns a little bit. at 3500rpm it hesitates somthing horible. today i landed a shift right on 3500 and it nearly gave me whiplash (not really). As it is a 87 it has low imp injectors and i have heard of problems with hesitation. does anyone know what would be the best way to deal with this problem? Thank you in advance.

well the hesitation wasnt nearly as bad befor i had done all these mods, i'm just wondering if its just how the low imp system is or wether its somthing i can fix.

its weird because it cools back down to normal at idle, but under a load it heats up, i have a 16" electric fan run to a thermostat so it kicks on and off.
