Banned. I got OWNED!!!
I would guess your hydraulics. Currently mine does that, but only the first time I use the clutch. It has a small leak in the line which I need to get around to replacing.

clutch slave cylinder...same things happening to mine, rebuild it or replace it...also, it MIGHt be the clutch master cylinder, def. doesnt sound like your throw out bearing.

By saying the "hydo thing" do you mean you've bled the system and removed any air from it? If not, follow the FSM's instructions for bleeding the system and make sure your clutch fluid reservior has the correct amount of fluid in it.
If that's not the case, then inspect the many components of your clutch hydraulics system. Check your master cylinder, clutch line, and slave cylinder.
I had the misfortune of having an absolutely catastrophic clutch hydraulics system failure. Both my master and slave cylinders blew seals and my clutch line also burst. However, since your problem only happens SOMETIMES, it sounds more like air in the lines.
