It would make finding a set of 2nd hand wheels easier if you knew which other cars have the same specs because most people only put the model of their cars in listings when advertising their wheels and not the wheel measurements.

Some of the mustang wheels fit if you want something larger and wider. I like the cobra R ones but they're not cheap anymore when you can find them. Real 1995 Mustang Cobra R Wheels and Caps R58 | eBay
The Bulllit style is cheaper. Set of 4- 2007 OEM Ford Mustang GT wheels and tires. 17 inch. Pickup only. | eBay
Both are 17 x 8 +30 offset which I hear works pretty well. Of course the 16" Mustang have the same bolt pattern but I don't know the offset. Never looked into them as I find most of them ugly.

You're looking for a 5x114.3( 5x 4&1/2") bolt pattern. I think the 16" FC wheels were 16x7 +40 offset.

I'm looking at 2 rays volk wheels with 17x8.5 +30 offset. Would they fit on the front or back?

Sorry didn't notice you're in Australia. Google is pretty handy for searching wheel specs. This site is pretty good for bolt patterns. Not so much for offset. 5x114.3 - Bolt pattern - Wheel-Size.com

I've seen them on FC's ...if I'm not mistaken they are all +30 offset in 8 inch and the turbo 300zx has a rear 8.5 inch wheel.
