will the motor and gears for the '91 sun roof fit and work in an '87 TII?

Yes, the series 4 and series 5 sunroof motors are completely interchangable. I did the opposite of you - I put an '88 TII sunroof motor in my '90 N/A.

The connections were the same, the motor functioned normally.

Oh, and pay special attention to the way the gear is lined up when you are reinstalling the sunroof motor.

The service manual outlines a specific proceedure to ensure you align the roof panel and motor correctly.
