An OEM pressure plate is going to be very light. It'll get stiffer the longer you have it, but it'll never be difficult to press.

I've seen that it differs from the brands. The Exedy clutch on my car was medium stiffness while an advance auto OEM one was light as hell, both held up good.

If it was replaced with a Centerforce DF clutch it will extremely light because of the design. It sucks, I had one on my car once and I counted down the days till I changed it. Yuck.

Changing out your cylinder will change pressure of the fluid but I don't know about clutch force.

You'd need to change the pressure plate to get a stiffer pedal. Something with a high clamping force will usually take more force to disengage. My current clutch is rated for something like 300 ft. lbs., yet it's only slightly stiffer than stock. It's still new though, so in 20,000 miles it should be quite a bit stiffer.
