You're talking about the one-piece seat back?
DON'T DO IT!
These racing harnesses are designed to run through support holes *through* the seat back.
If you don't have those support holes, the harness is next to useless.
If you try and use them with those seats, they will probably slip down the sides in an accident, which will cause serious harm and injury to yourself.
I'm sorry, but you need a dedicated "racing seat" with the proper support holes to properly use these racing harnesses.

3) helmet which keeps your noggin from getting bashed open as it smacks against the tightly fit rollcage/bar.
of course none of this matters so long as you never get in a wreck

You should consider racing seats such as Sparco, MOMO, and Cobra. You can can get one of the lower priced models like the Sprint, Start, or Monaco. You will not be able to recline the seat back but, these seats are entry racing seats and will be alot safer than the seats you referenced. You most likely will have to make custon brackets for any aftermarket seat you get. I have the Cobra Monaco's that I purchased from http://www.polepositionusa.com/ for $269 each with free shipping.

but if you have the 4point tight enough do you really have to worry about the buckle hitting your gut. and also i know that with the nylon straps they are made to strectch 20% longer when a accident happens. but i was just wounder is the 5th strap a must or what.

On the helmet issue. Keep in mind that MC helmets have different ratings and standards than Auto helments. Some sanctioning bodies will not accept the MC designation for drag or road racing. The odd thing is, the helments are often identical in construction, they just have a different certification. Check with your buddy before making your final purchase, and the rules for whatever type of competition you will be involved in.

Rock the stock belts...just get a CG Lock(or whatever it's called) these will hold you in awesomely for the track and allow your body to move the way it needs to if you get in a wreck/rollover

If you get a rollbar or cage you should get a "SA" rated helmet not a "M" rated helmet. A "SA" rated helmet is designed for multiple impacts against a rollbar or cage. The "SA" will also have a Nomex liner.

Are we talking about vert seats with the adjustable headrests?
If not, you are taking a serious risk that could kill you.
Deceleration G's are 5...10...sometimes higher.
Trust me, the belts will slip off - there is no way you can test that safely.
