Had a NA S5 ten years ago and just got my T2 S 5 recently, both bone stock. Don't know if it is normal or just my T2 needs work, I think my NA is way easier to rev than the T2. My T2 has super heavy gas pedal, I have to be concentrated to drive. I remember the NA is easy on everything and all I need to do is keeping the Rpm high from start.

TIIs are notorious for having rusted, kinked throttle cables so the throttle feels heavy compared to the n/a.
i did the n/a throttle cable conversion on my car and instantly felt different.
i often wonder why they route the turbo throttle cables around the whole engine bay 3 times before getting to the engine itself.. i guess the added deflection is a safety device for lead footed drivers, too bad it makes the throttle responsiveness feel like you stepped on mashed potatoes.
