Back in 2005 I got a set of replacement leather seat skins for my '89T2 from leatherseats.com and have been very happy with them. If they are still in business, I'd give them a call. My FC had the original series 5 turbo seats in black leather (i.e., high-back buckets with integrated headrest, separate center panel seat back insert) and they had the usual cracked & worn out leather with tearing seams on the driver's seat side bolsters, but the foam padding & seat structure was all good and intact, so that was my starting point for the project.
The leather seat skins I got from leatherseats.com cost me about $500 shipped for both seats, and they included a bag of hog rings & hog ring pliers needed for installation. The leather was better than the stuff Mazda used, but a very close match in terms of grain pattern & color, that matched the stock pattern well and fit perfectly. After ~14 years they still look & feel like new, and I'm always getting compliments on them at car shows.

They might still have all the patterns for the FC's though, and still be able to make you a set. Call them and talk to someone - I recall when I did mine, they didn't show the T2 seat pattern on their website either, but they did show the vert & GXL style seats with the separate headrest. I talked to someone there, and exchanged a few pictures of my old T2 seats via email, and they verified they had the pattern and he gave me a part # to order. Cost increase is no big surprise in 14 years, and I'd expect you may have to pay a little more for a "one off" set of FC covers - probably not something they stock for immediate shipment these days.
