Water and Oil temp

I have a 80 with a 13B 4 port I made using 70's plates and -se rotor housings and a 90 rotating assy. Just rebuilt with 900 miles or so on it. My water temp gets to 210 deg driving in the city(temp in las vegas is 106) at night it drops around 5 deg cooler 195-200 deg. Oil temps around 195. I have a elec fan installed. I was driving on the highway at 75-80 mph and shut fan off and temp didn't lower or climb. What can the problem be or is this normal for a high temp we have in las vegas? Just bought a new radiator and mazda thermostat. Running distilled water/antifreeze/water wetter. Give me some ideas on what to check next. Want to get this fixed for a 4-5 hr drive to sevenstock..

Sounds about right for hot weather.

Dan atkins has the correct T-stat for our cars in a 160, the Stock is 180. I put in a 160 from VB (Not the correct one) Before I was running at 210 at the waterpump, after I was at 180 at the waterpump.

So to sum up, you might try a 160 t-stat.
