First I suggest you make sure all your light bulbs are good. The gauges are backlit, so if you have a problem with them at night, then one of the bulbs is probably burnt out. If you say they are too dark in the daylight, take off the sunglasses or don't drive.
I put some custom white face gauges in my car. I made them myself, but I'm not very creative, so I borrowed some ideas from another person. There are some white face gauges for sale somewhere, but I can't remember the site right now. The only thing to be carefull of is the tach needle. When taking it off, be VERY gentle. I ended up wrecking my tach because I pulled too hard on the needle to get it off. Now it doesn't work.

Yes but why? If you want optimum visibility, the best contrast is white/yellow numbers on a black background. Sounds like something is wrong with your instrument panel lights or the rheostat which controls them, or the guages could be faded/dirty.
To repair or re-face your gauges, try North Hollywood Speedometer or Palo Alto Speedometer. They have restored gauges from my other cars and I highly recommend them both, especially for VDO gauges.
