signs of a good carb?

I am in the process of swaping motors out of a gs the last motor had blown apex seals in the front so i am swapping in a known good motor. I have a few carbs laying around that i removed all the unnecessary BS for apperance and ease in troubleshooting if there should be any. and was wondering if there is a visual check i can do to know if the carbs are in operating order. maybe checking float levels or something.
