Re-Speed Rear Coilovers
I bought a used set of Re-Speed rear adjustable spring perches and springs ("coilovers") and kind of test fitted them into the car last night. With the rear axle hanging as low as the shocks would allow it to go, there definitely seems like a ton of room for the spring to move around or fall out.
There does not appear to be any install instructions on Re-Speed's website, and I had to drive home so I just tossed the original spring back in.
So I guess my questions would be as such; are these supposed to be used with a shorter aftermarket shock absorber? Do you use any isolators/rubbers with this setup at all? How do you keep them from falling out? Any good installed pictures?

No isolators. Like many performance spring setups, they will come loose when the suspension droops. I don't think this is generally a problem unless you plan on "flying" your car.
Nontheless, I didn't like this condition, so I sent my rear shocks back to Bilstein to have them shortened, back when I had an OEM rear axle. It was a long time ago, but I don't think it was very expensive.
With my current aftermarket setup, I have adjustable shock brackets so I can avoid this "problem". If you want to do some mild fab work, this might also be an option for an OEM rear axle. Regardless, you can see what the installation looks like here -->
