RB holley 600 settings...thermostat?

I have gotten a lot of challenges fixed with this project, but I am still not happy with how long it takes for the car to idle on its own. Now keep in mind this is my first carb adventure so I know little about it. The car starts right up but takes 5-10 minutes for it to idle (about 1200) without me giving it any gas... after that time runs pretty nice. I have been told there is some thermostat setting maybe? Where and how do I adjust this... and is this what I want to adjust? Thanks guys, you have been a big help.

Is that engine street-ported, J-bridged or stock?

Holley makes at least 5 different 600 CFM carbs...does it have the choke flap over the primaries? In order to idle when cold you need that flap to be virtually shut to get a cold idle...
