Optimal Water/Oil Temp

What is the optimal water and oil temp for a rotary engine? I got aftermarket gauges, and would like to know when I should start worrying

My oil temp stays around 140-155*F when I am driving around. Highest I have seen was on a 90*F+ day and wringing it out on the track for 20 minutes, max being about 180*F.

My oil gets up to 155 when I am cruising on the freeway.

It gets up to 210 when I start flooring it for awhile... is that a good thing?

My oil temp is about the same as Jeezus. It also goes up to around 170 (180 on a hot day) if I let it idle parked for a while, since I have no fan shroud.

My water temp stays right at 180 during normal driving on normal days. Its gone up to about 200 on really hot days going up hills etc.
Oil temp is usually around 150-160 like the others said, and gets up to 180 on the hot days. It went up to 190 a few times during really hot days but usually it stays pretty good.

Well, I just mentioned oil temp because I don't have an accurate water temp gauge. It always stays right at the same position on the stock gauge, though, which I assume is 180F, since that's what thermostat I have installed.

my water temp stays right at 180, hard driving for a bit goes to like 185. New engine, largely new cooling system but beehive oil cooler.

oil temp no idea yet

Well the water thermostat opens at 180*F so that's where MAZDA wants it to be.

180-195 is normal. 210 slow down, 220 stop. 250 cooked.

Oil temp - the oil cooler has a thermostat too and I think it opens at 180* as well. My oil temps are 160-180 normally, not unheard to get up to 200* when on the pipe. 250* cooked.

Royal Purple 20/50 immediately lowered my oil temps by 10*F.

Spraying self expanding foam around all the holes and gaps in the nose to force air thru radiator and oil cooler only immediately lowered both water and oil temps by 10*F each.
