Have to hold choke after rebuild
So I had my carburetor rebuild by one of the better-known carb rebuilders in my area, solved all my issues ( and got mechanical secondaries and a modded Nikki) but my car now requires me to hold the choke for about a min or the car will sputter out and die .. Normal or?
I also want to make it clear after i do this the car will idle just fine, drives just fine, and holds idle just fine after I turn it back on again and hauls *** like never before.

Are your plugs new? How about compression? Lower compression can be harder to run on cold start.
Mine will stumble in the first few minutes, I just leave the choke on, just pushed almost all the way in until it shuts off by itself. Yours doesn't sound off. The choke is needed to manually control air/fuel until it can run on its own.

Also, this time of year, low temps, the engine warms up and the choke releases...is your magnetic choke hold not functioning?
Normal: when you turn the key on a cold engine and pull the choke it's supposed to stay pulled, you can adjust it in/out but the magnet keeps it fixed at that position. When the engine warms, the choke automatically releases.

Fixed the issue, adjusted the air screw back to where it was when I got my car back from the carb rebuilder, but now when I gass it the car sputters for a brief second ... flm.
