Has anyone removed their Headlight Motors and now open/close them manually?

That looks like a winner. For a roadrace car, though, you'd want to change it slightly so the "removeable" brackets stayed in place, and also lock the headlights in the "down" position. Don't need 'em flopping around.

You'll regret removing them if it's a street car. I'd only go that far into weight reduction if it was a track only car.

Maybe you could remove everything but the swivels so it moves up and down easily by hand. Rig up 2 little rods to act like a hood prop. Prop them open when you need them, and fold the prop down like you do in your engine bay for your hood and let the lights sit flat.
