Fuel Check and Cut Valve

Hey guys,

Getting ready to install a new mallory fuel pump as part of my holley carb kit from racing beat. The instructions say to cap the fuel return line that goes back to the Fuel Check and cut valve. My question is, is there any reason why I cannot just remove the whole valve assemble next to the fuel pump? Also, What does the big white plastic valve do that sits above the fuel tank and has several lines going to it. I cant seem to find it in any of my manuals. Thanks guys

That's likely the roll-over cut-off valve. Important safety device; prevents fuel flow when the car is upside down.
