Can this stay disconnected? (Delooming Wiring After rats nest removal..)

I have successfully eliminated all of the plugs that once went to the solenoids on the rats nest, as well as the ones that went to the carb before I stripped it. There are only 2 wires left that connect to the passenger side wiring harness, they run to the water temp sensor on the coolant neck i believe.

My question is this..

Isn't there another temp sensor below the oil cooler, and can I just leave the one disconnected? My gut is telling me no, and I have taped up and ran the 2 back to it temporarily. Like I said, these are the only 2 still connected at the harness, and I would like to eliminate them if possible. Thanks, Justin.

Here is a pic of the sensor in question.

The sensor in the picture is the choke water temp switch, the other temp sensor that is below the oil filter controls the stock temp gauge.

I see.. the only part of the choke I have left is the **** which hooks to the fast idle rod... so I believe it can stay disconnected then?

The water temperature switch activates the magnet that holds the choke **** in place when the car is cold. If you disconnect it the choke **** will not stay where you put it.

Obvious solution: Manual choke.
