We got our carpet from www.auto-interior.com for less than $160. Fit quite well.
Replacement rubber seals from 1A Automotive from Ebay. $55/pair.Otherwise Victoria British has window seals.

Mirrors:
ebay all the time, about $25US each - used, obviously. But be warned if you have an early SA check under your mirrors to make sure there is a hole for the wire harness to come up into the mirror base. 79's did not have the hole. The mount points themselves are the same in europe or north america (I know because I bought european door mirrors for my SA). Make sure you get the rubber weather seal for the bases, too. The bullet mirrors are electric, so you will need the harness from an 81+ RX7 to operate them. Of course, your SA could be an 81+ car, since all first gen RX7s in europe are serial numbered "SA", not "FB" like our 81+ are
Seals:
mazda still sells them here or victoriabritish.com, or also ebay they are regularly listed for about $55US
