Well, depends on who "they" are. Insurance companies and prospective buyers value them just above junk, while sellers are somewhere between gold and platinium.
Actually, I recently went down this road. I applied for an agreed value type policy with my local (auto clueless) agent. After providing pictures and docmentation the Insurance company came back with an amount about half of what I applied for. I found a local independant auto appraisor who for $80, gave me a piece of paper certifing my car was indeed worth more. I gave this to my agent who re-submitted it and presto! For a slightly higher premium, my car is now worth more. Is this a great country or what.
I'm not trying to set any market price for Rx-7's, that's a whole other thing. I just want to protect my actual $$ spent in case of loss due to fire or tornado or something.

I have classic car insurance on mine, Hagerty. With them, and other similar insurance companies, you should be able to get the value you're looking for, as long as it's worth it. If you're trying to establish a higher than normal amount, then you just may have to get an appraisal, as Banzai stated. Just for reference, I have my SA insured for $5k, and could very easily have that raised if I wanted. Just trying to keep the premium down while in school, and I only drive it for maybe a few tanks of gas a year.

They are insured as collector cars. That means they are not daily drivers. I had to demonstrate that I have an alternate vehicle insured as a daily driver. They cannot be used for work commute or shopping. I can however drive across country if I want. My policy has far fewer restriction than haggerty does.
In reality I only put about 5000 km 3000 miles) at the most on each in any given year.

I have a 5k policy on my 79-SA, there is a jdm rhd drive also a 79 SA locally carrying a 10k policy.
They want to know things such as parked indoors or out miles/km's driven a year and of course taking your driving record into account and blah and blah. Insuring it is no problem question is how much will the policy cost

i had mine appraised for $8,500 and for the colector insurance i pay $19 a month.
i can drive it for anything but work and daily erands, and it no longer needs to go through smog checks

I have an agrred value policy with Hagerty, I have mine insured as a "modified " vehicle. I use it for trackdays and Auto-xing it cost more than insuring a stock car and they wanted pics of the interior, exterior and engine bay and gave them a the value I thought it was worth.
Its insured for $10000 replacement value, no deductable for repairs. I pay about $130 a year. Its insured everywhere except on the track or in the paddock. I can't DD the car either.

They do the same thing here in TX, it's classic car registration. If I remember correctly they have 2 versions of it here, Classic and Antique. Antique is what exempts you from inspection here, period. You can even put the original plates on the car if you have them, best part is no window stickers ^^. However Antique registration is also limited to being "parade and car show" only vehicles, but I know plenty of people who break that rule. As for the Classic car, well its kinda automatic after 25 years. You're still exempt from smog but so is everyone else's 25yr+ car, but you still have to pass safety. Basically if your car came with seat belts it has to have seat belts, airbags, etc. No one ever checks for cats though, they'd have to prove that it came with cats and none of them are going to go through that hastle. Classic still has to have window stickers tragically though. You basically the only thing Classic status affords you is special license plates that say classic on them.
