Alternate rear options?

So as GSLSE rears are not nearly as abundant as they used to be, what are some other good options of getting some disc brakes and rid of the annoying 4x110 bolt pattern?

Well, you can always pull the axles and redrill them.

Yeah, but then you still have the annoying brake/hub design.
