The Miata seat swap was actually pretty difficult. I had to make new brackets to mount the seat tracks for both seats. They are nowhere near bolt in. Unless you are fairly good at fabricating stuff, then I'd try and find another option. It was very time consuming, and frustrating. By the end I was wishing that I had just recovered my old seats. But, now that they're done and in there and I love them. So in the end it was worth it, but it wasn't easy by any stretch of the imagination.

door panels, and rims ....A+++++

is that a plastic dash cover?

If so how does it fit around the center air vents? I cannot fit mine better than a 1/4 inch gap. How did you hold it in place while the silicone glue dried??

I tried going with Miata seats in my first FB project "The Panda" and while I was able to get them in there, (way too much fab work like you said) they never seemed quite right. They weren't exactly centered, and at that point I was so fed up with them I ditched the idea and got some mint S5 GTU seats. They basically bolt right in, and look/feel amazing. Having said that very nice job on the Miata seat install, looks like it came out much better than my attempts did
One question, with those door panels, how has it been not having anything "soft" to lean your left arm on? I find myself always having my arm on the top of the panel (when the window is open of course) and on the small armrest when the window is closed...

Yes, that's a Grant steering wheel. I think it is a Formula GT wheel. It's 13". I got the wheel and adapter for about $70 on sale at Advanced Auto Parts. It's pretty small, and yes it does sorta get in the way of the gauges. However, I'm 6'4" and need as much room as I can get for my legs. It's a tradeoff that I was forced to make. Otherwise I have a hard time cramming myself into this car.

i'm interested in a mahogany grant wheel and was wondering if the wheel just bolts onto the steering column or did you have to get an adapter?

You need an adaptor for any aftermarket wheel. But they are pretty easy to install.
