Let's make this easy. in those widths you will want to run ideally a +45 to a +50 offset. Anything under that has the potential of rubbing depending on the tire width you use. This would allow for a 255/35 and 285/30 setup. if you stretch thin *** tires on it then you might be able to run a lower offset.

The offsets above are a safe way to go. The Speedking setup might have worked for you but it is a conditional setup. Whereas the offsets listed above +45 to +50 are the safest to go with and you won't have to ask so many of these questions.
Obviously if you run some pretty massive spring rates it can alleviate chances of rubbing or possible a front sway bar. Your choice of tires and their respective sidewalls can also make a difference. Your wheel choice can also vary this because not all 8.5" wide wheels measure the same from outer edge of outer rim to outer edge of inner rim.
