The 2 piece design just allows separation of the middle "Spoke" part of the wheel from the "Rim" part.
Even if you were able to seperate the inner and outer pieces of the rim, you's still need to seal everyting up properly. That design wouldn't hold air.
A good shop should have no problems mounting and balancing lo pro tires.

you need the spokes to balance the tires... the removal of the spokes would only allow you to refinish the spokes. however i decided since i don't know the torque and pattern of those little rivits/bolts i'd decided to leave everthing attached.
