MN Are my new wheels going to jut out too far?

I currently have a 1985 GSL with the 13-inch "plus" style wheels on stock-size tires (185/70R13). I am looking at getting some 16x7 wheels with 195/50R16 tires on them, but I'll need to use wheel adapters because they're the 4x114.3 bolt pattern. The adapters that I'm considering buying are 1-inch thick (25mm), and I've taken that into consideration when doing my calculations. I have a few variables that I'm not confident about, though, and I'd highly appreciate any input or knowledge that can help me.

The main thing I need to confirm is the width and offset of my "plus" wheels. The FSM's section on wheels/tires only lists the full specs of the GSL-SE wheels (14x5.5 ET45), which seems irrelevant to my situation. However, the Technical Data section does list some wheel and tire specs, and my stock tire size seems to correlate with a 5-inch wide wheel. Then again, I just read a forum post here that possibly disagrees:

put the stock info in and put your new comparing info in and it will give you all the differences below in the charts (how close it is to your suspension, how much it will poke from old wheels, if the wheel is larger etc)

Given this information, this is what my "plus" wheel looks like compared to a GSL-SE wheel:

But if I instead use my findings of 5-inch wide with an offset of 38, you'll notice that the outside of the wheels and tires line up perfectly, suggesting that I'm on the right track (no pun intended):

I'd really appreciate if anybody could clear up this discrepancy for me and lay a lot of suspicions/guesswork to rest, but for now I'm going to be using my numbers for my calculations. Below are two pictures; on the left, my current wheel compared to the 16x7 ET20 wheel I'm interested in, if I had the correct bolt pattern. On the right, what it looks like with the wheel adapter added into the mess (20mm offset - 25mm adapter = -5 new offset).

Now obviously I'm not too worried about anything rubbing inside the wheel well, but that adapter would make the 16x7 wheel stick out 68mm farther than my stock wheel (that's over 2.5 inches)! At the very least, I realize I'd have to roll the fenders, and probably add camber in the front, but would that be enough? I'm imagining it would look pretty silly even after that, unless I got fender flares or something drastic and I'm not going to do that unless I can get them painted to body color (which, considering my car eventually needs a fresh paint job, wouldn't happen for a while). Not only that, but I am still running my stock 26-year-old suspension, and I'm very worried that hard cornering and braking would make the fenders carve into the tires without remorse, because my car does have a lot of body roll at the moment. Basically, I just want opinions as to whether or not this setup would work out.

Although, I am also contemplating getting different 16x7 wheels with a 38mm offset instead of 20mm, which after the adapter comes to 13mm. It almost directly compares to the previous 16x7 wheel without the adapter, in terms of how far out the rim protrudes:

Should I get this one instead, even though I find the first one more aesthetically pleasing? I'm really frustrating myself trying to reach a decision here.
