You are thinking right.
Knowing your RWHP goals is imporant. There are essentially two schools of thought when it comes to pumps.
One big boy - The benefit of one pump is that if it fails, you will immediately know. Depending on your power goals there are pumps that will supply 500whp with no problem. The Stealth and Walbro 400 should both do this. However, if you are going higher, you may need dual pumps.
Dual pumps - This will obviously get you there. Even dual stock pumps will put down some serious flow. The issue here is that if one fails, you will not know. The other will keep the car running until you run lean during high boost. Bad day for your engine. If you are shooting for the stars then you have no choice but to go with dual pumps.

Or if you have basically any ECU other than a PFC, you can use the engine failsafes contained in the software to monitor fuel pressure and can program protective measures if the fuel pressure drops.
Just make sure you are using a good check-valve in the system to prevent backflow.

Overall, forget about whp numbers, they have too much variables. Look at the peak compressor flow rate, S366 will do over 80 lbs/min. That, can translate to 700 HP... At about 11 AFR, and boost being around 30 psi, you will need pump which can support over 300 LPH (450 lbs/hour) at discharge pressures exceeding 80 psi (assuming 43.5 psi base pressure).
Walbro 400LPH with voltage booster will support these flow rates. Dual pump setups have too much flow for these power levels on gasoline, which also can be bad thing. For example, dual parallel 044 setup would be flowing almost double of required fuel volume at peak power. One pump could be turned off, but still, at any situation apart from WOT, hot fuel will be circulating in whole system and then it will start to cavitate at pump inlet, not good...
Current injector setup should support about 600 HP at 43.5 psi base pressure, substantially more with higher base pressure, but upgrading to ID2000 secondaries won't hurt.
