Well for more travel you can mount camber plates on top of the strut tower or make extended travel top mount plates in the rear. Both are pretty common.

What I mean is that they cut off the top of the strut tower and welded another one on about two inches higher.

Yea, add a tube to the shock mount, then a plate on that, mount the shock to that. Adds travel to the shock, I've seen it done several times.
