Power FC water temp?

water temp?
so two questions
1- cars warm 3rd gear pull starting temp is 80c as i accelerate not quite WOT the temp drops fast say to 65c, let off the gas and temp returns to 80c... whats going on
2- car is tuned to 10psi cause i need a new fuel pump/s, but anyway car is over boosting say to 15psi how do i turn the boost down in the pfc i have the apexi solinoid and the 3bar map sensor everything is hooked up correctly, i've droped the boost setting in the settings menu from 85kg to say 75 then when i do a pull as soon as it gets say 8psi it chokes/falls on its face ??
