Replacing Bolts and stuff

I've been cataloging all my hardware as it comes off the car and have a little problem. Most of my bolts have been painted over or corroded like hell, and they're cheap to replace. Problem is, mcmaster.com uses DIN fasteners, not JIS, so the heads for many bolts (hex screws) are too big. If I go with McMaster, I can go with stainless, blue annodized, zinc-plated, or plain and trying to decide how to go with it. Any ideas?

Hey Crit post up a link so we can see as well, I would say it all depends on where the bolts are going. I am a fan of black bolts but i havent been able to find any that dont rust, I also like the looks of the bolts that need nex keys. I think they look good. I am currently jsut replacing with stainless bolts, nuts and washers. cause they are more convienient for me to get.
