S5 Timing problems

Hi everyone,
I have a S5 Fc3s turboII Cabriolet which I have just rebuilt the engine on myself eveything seems to be fine except I have two minor problems,
the first is I cannot get consistent timing settings, for example if I start the engine from cold it fires straight away and I let it warm up then if I blip the throttle to make sure the engine is up to tempreture and it idles at 750-800 if I connect my timing light it shows the timing is correct, if I then go out for a drive and give it some, when I come back my revs are pulsing between 800-2000 rpm if I check the timing again it is really retarded if I stip the engine and restart it will pule for a while then settle at 800, the timing will be still be off outside the adjustment range of the pick up unit. Help?
The other problem is the car has oooooooooooodles of power until about 5500 rpm then seems to loose all power and creeps up from there, I have tried the usual vac lines, injectors cleaned, fuel pressure is fine, the only thing I am a little concerned about is the new rubbers that seal the injectors into the inlet manifold are a little small and not as positive as the originals, does anyone know where I can get the right ones from? and would this really cause such a dramatic loss of power after delivering neck aching power at lower rpm?

check the TPS first, it is known to cause surging idle. Do a search on that in the 2nd gen forums. the timing will only be correct when it is idling around 750
