I'm sure you'll have questions, but this is what I have now. I've got an 82 RX7 and the steering wheel is not centered while the wheels are straight. How do I go about rotating that back to center?

Your car probably needs an alignment.

^Agreed.
But wondering WHY it's needing the alignment. You or a trusted shop need to closely inspect the suspension, especially the front end for anything like worn or damaged tie rods, bushings etc., THEN have it aligned including rear thrust angle. If the steering wheel is still off center then you can remove and reinstall it (with the front wheels straight).
