Let's see what the 3rdgen guru's can offer as quick tips but this is one of those areas you generally don't want to speak to since it always seems you get some chump that comes back and says "why didn't you mention to check the EPROm codes???" or "but you said that wasn't something to worry about!!"...

Nonetheless, welcome aboard, Ben!

And ask questions.

FYI you will probably be able to answer most of your questions by using the search function within the 3rd Gen section. Past discussions have covered just about anything; if you find the old information you don't have to wait for answers.

That said, the 3rd gen is a car that deserves plenty of thought and care in purchasing. There are many stories of someone buying a fast FD and trashing the engine or trashing the car because they changed something they didn't understand. They can be a real mess and many of the cars for sale are just like that. It's very important that your expectations are realistic and you will find it to be a very rewarding experience.
