1980 SA Rx7 Engine Temperature Fluctuations

I've starting driving my 80 rx7 after rebuilding the stock 12a. I'm still taking it easy, and I haven't had it above 4k rpm. I have the racingbeat carb, intake, and exhaust.

I've noticed that the temperature gauge in the dash will creep up if i have the engine around 3k rpm, and drop almost immediately when I idle it. Other times it doesn't rise at all, but most of the time it sits around 3/4 of the way up. I have a laser thermometer and I've been pulling over to check the engine temperature in different places (water pump, oil pan, spark plug side, header, etc) but I've never seen any significant or worrying increase.

Has anyone else seen this issue? It just really goes against my grain to keep driving when the temp gauge is climbing in front of my eyes and I'm curious what others think about the problem.

Get and install a aftermarket temp gauge, the stock ones are old and inaccurate
