NC New User and RX-7 Cherry

Hey folks - I'm Steve and we've acquired my pop's 1986 RX-7 GXL. Body's in good shape and the rotary engine was replaced but the interior is old. Every piece of plastic we touch breaks. I'm hoping to get some advice on what parts I can replace with current parts and what has to be stock. This is my daughter's first car and she's learning to drive stick so my first real project will be a clutch replacement...

i would say seat covers and or craigslist+maintenance w/tlc

My daughter hasn't driven a stick before either. She did fine till she got into a Walmart parking lot around a lot of people then she freaked out.
