How do I test the thermosensor?

Can anyone explain to me how to test the water thermosensor and the thermoswitch? My car is running rich and I'm trying to track down the problem.

First put a pot of water on the stove with a thermometer in it . Hook a volt ohm meter to the sensor and put it in the water and heat it up . watch the tempt and the ohms . when the switch trips the meter will tell you then look at the temps
